Rose Petal Jam / Jelly.

Rose Petal Jam / Jelly.
Wow your friends at afternoon tea . Serve scones or a sponge with cream and rose petal jam.
It's so easy to make and delicately scented.
100g of pesticide free rose petals [I used Papa Meilland]
3 cups of water
1 1/2 cups of sugar
1 tbsp lemon juice
1 1/2 tbsp of Jamsetta
Trim white or yellow ends from petals.
Combine petals and water in large saucepan and bring to boil , simmer covered for 30 minutes .
Strain, reserve liquid.
Combine reserved liquid , sugar , juice and Jamsetta in pan , stir over heat without boiling until sugar is dissolved.
Bring to boil ; boil uncovered without stirring for about 10 minutes or until jam jells when tested .
[At this stage you can stir in a few extra petals if you wish]
Pour into hot sterilised jars , seal when cold.

Do you reckon rose hips could ber used instead? I have a mile of 'Scabrosa' hips that are big and juicy.

I forgot to say.. WOW! It looks delicious... easy to make too... I've not heard of Jamsetta before. What is it?
